Ingredients:
· 1 kg Fish Fillet
· 1 liter Coconut milk and 1 liter Water
· 2 blended Onions
· 4 Cloves Garlic (blended)
· 10 Red Chilies (blended)
· 2 tbsp Turmeric Powder
· 1 tbsp Sugar
· 3 tsp Salt
· 3 sticks of Lemon Grass (crushed)
· 1 piece Galangal ( a dried root of a plant from the ginger family)
· ¼ cup Tamarind Juice
· ½ cup Oil
Method:
· Saute’ blended garlic, onions, lemon grass and turmeric powder until fragrant and light brown.
· Add in fish, pour coconut milk mixed with water, add salt and sugar, still slowly until it gets boiled.
· Pour in the tamarind juice.
· Let it simmer down for 4 minutes.
· Serve HOT :D
